and put into it the milk and chocolate, either grated
or shred down finely with a knife. Simmer until

over the fire until almost boiling. Remove at once,
and add the flavouring.
Notes. — A plainer sauce can be made by omitting
the yolk of egg and adding 1 tea-spoonful corn-
flour, broken with a little cold water. This must

brandy or liqueur may be added to the sauce if
