table-spoonfuls of this beaten white into the hot
milk, poach them slowly for a few minutes
and when firm, lift them on to a dish. Add
sugar to the yolks of eggs in the basin, and mix
them well together. Dour the milk that is left
in the saucepan slowly on to these, stirring all
the time ; return to the saucepan, and stir
carefully over the fire until the custard thickens.
