Take two pounds white cabbage and slice small. Add one pound onions (chopped), one pound bacon (diced), one poimd apples (sliced). Mix together, add one quart water, or stock, and braise. Add the juice of one pound red beetroot, one table- spoon vinegar, and one pound of cream. Serve very hot. Chef Paul Germain, S^. Bdgenland, Red Star Line Japanese Tenderloui Steak (Four Persons) Cut one pound tenderloin in thick, narrow strips. Mix two pounds string beans, cabbage, carrots, onions (thick slices). Heat iron pan and add beef fat, cooking meat slightly first. Then add vegetables, pouring over all a Httle water. Add seasoning with salt and sauce. Cook imtil done through.
