Fruit — fresh, stewed, or canned — left from a previous meal lends itself easily to desserts of gelatine or shortcake nature, while sour milk and cream will help in making muffins, cookies, and gingerbread. Ends or small pieces of ham chopped or ground fine can be used temptingly in many ways. Ham omelet is always delicious, or minced ham on toast can be served. Ham timbales, or biscuit, or escalloped combinations, are some other good ways of utihzing the meat. Vegetables may well be served as vegetable hash, combining with it a fresh green salad and hot bread. Salads are always excellent. Left-over vegetables, cut into small pieces and marinated with a French dressing, can be made into an interesting salad by adding some celery cut fine, then arranging it on a bed of lettuce leaves with perhaps a slice of tomato or stuffed egg to finish the product.
